Whitefish Fishing:
Whitefish are very common in Ontario and can be found in great numbers in Clearwater Lake and Pipestone Lake. Just after the Ice is out the Whitefish stay just under the surface waiting for the May Fly hatch. This is a great time to catch them. You can cast tiny spinners or troll with tiny Rapalas and tiny Thundersticks. Another popular way to catch them in early spring is with a Wax Worm. Get a small float and a tiny hook and just cast out and wait. What is really getting popular is fly-fishing. Some guests wait all winter just to be able to catch Whitefish with their fly rods.
Whitefish fight like hell and can reach 15 pounds in our lakes. The most common size is 2 to 5 pounds, which is the best eating size. Since Whitefish generally travel in schools, it's not uncommon to catch your limit in an hour if you happen to run into a large school. This is a great way to bring fish home for the big fish fry because you are allowed to keep 12 with a sports license.
If you have eaten Whitefish before and thought it was too fishy or too strong, there is a solution. Whitefish can have a stronger taste than Walleye or Perch because it has more fat on the stomach and the top of the back. You can cut off the stomach meat and a thin strip at the top of the fillet where the dorsal fin was, which will eliminate 80% of the fishiness. Many people soak the fillets overnight in milk or vinegar and lemon juice. Whitefish, when properly prepared, is delicious.
